Instructions
Prepare Your Pan:
Grease a 12-cup muffin pan (or a bread pan) with ghee or coconut oil using a silicone basting pastry brush (or a paper towel if you're not feeling fancy 😉).
Preheat the oven to 350°F. Heat up the ghee and grease the pan with half of the recommended quantity, pouring the rest into a medium-sized mixing bowl.
Mash the Bananas:
Mash 3-4 ripe bananas with a fork. For those tracking macros, be sure to weigh the bananas for accurate carb measurements. Add the mashed bananas to the mixing bowl with ghee.
Mix Everything Together:
Combine the remaining ingredients—protein powder, vanilla extract, baking soda, blueberries, salt, flour, soaked chia seeds, and almond milk—into the bowl. Mix until well combined. If the batter is too thick, add a little water or more almond milk to reach your desired consistency.
Bake:
Evenly distribute the batter into the muffin pan, filling each cup about 3/4 full.
Bake for 30-40 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Cool and Enjoy:
Allow the muffins to cool slightly before removing them from the pan. Enjoy warm or store in an airtight container for a quick, protein-packed snack on the go!
Why These Muffins Stand Out
